
With the winter weather I admit to wanting to cook comfort foods which was also warm us up from the inside and outside as we have to turn on the oven. This easy Chicken Pot Pie recipe gets the whole family in the kitchen. First the kids join me in making it and then everyone rushes to the table to eat it. Add a side salad and your meal is really made in just a few minutes.
Easy Chicken Pot Pie Recipe
3 boneless, skinless chicken breast
2 garlic cloves
olive oil
cream of chicken or mushroom soup (I prefer cream of chicken but mushroom will do in a pinch)
pre-made pie crusts
1 small bag mixed frozen vegetables
Saute chicken with garlic cloves in olive oil until completely cooked.
Cut into small cubes.
Mix cream of chicken soup with frozen vegetables and chicken. I like to add a splash of garlic powder and black pepper (not listed they are optional).
Follow instructions on premade pie crusts.
Fill bottom of deep dish pie pan with one crust.
Top with chicken and vegetable mix.
Top with another crust.
Pinch crust together and bake in over for approximately 18 minutes or until crust is golden brown and sauce is bubbly.
The girls enjoying mixing all the ingredients together as well as working with the pie crusts. They are the ones who pinched it above so while it’s not perfection it gave mom time to wash the vegetables so we could quickly toss a salad after we removed it from the oven.
This easy Chicken Pot Pie recipe is one we all enjoy with bubbly warm sauce, crisp, flaky crusts and yes it even gets some mixed vegetables in the girls without any complaints.

Ingredients
