My husband and I enjoy having friends and family over and enjoying a variety of sporting events. Sometimes it’s football, basketball, soccer or car racing. My dad is a big fan of the sport and I grew up hearing the roar of engines and watching races like those at Daytona, Talladega and Bristol on television. Living in Tennessee made the excitment of race days even more fun as we lived close enough to be able to drive to the track. But whether whether hosting a party at the house or headed out there is always great race day food to have. Walking Tacos Recipe
Now it’s time to pick up my ingredients for walking tacos.
1 lb ground beef
shredded cheddar cheese
Frito’s (individual serving size bags)
chopped tomatoes (optional)
Cocina Latina Frijoles a la Mexicana (Pinto Beans)
- Brown ground beef and follow taco seasoning instructions.
2. Cook Cocina Latino Beans according to can instructions. I like to strain off the sauce before serving.
3. Set up Taco stand with remaining ingredients. My veggies are chilling in the fridge until we serve.
4. Open Frito bag and start layering with all your favorite ingredients.
Some people like to go straight for a larger serving and grabbed a bowl, but solo cups work well too for larger portions.
One of the best things about this recipe is that you only add what you like. For example Mr. Money Saving Parent doesn’t like tomatoes so he can make his without. It’s easy to clean up and it’s fun to make. It’s also something everyone can enjoy while we are watching the race without worrying about spilling plates.
Now that our Walking Taco is ready it is time to watch the race. It’s safe to put on my Ty Dillon cap and t-shirt and enjoy the race – unless my dad is visiting – he has his own favorite racers.
