The girls ran in the door the other day and announced, “Mom! There’s only 32 days left of school this year!” While I am excited about the opportunity to spend more time with the my daughters summer time brings with it a whole new series of parenting problems to deal with. The girls have a camp here and there, but for the most part the girls will be home. Let’s think about that moms and dads – HOME! That means they will also be eating more at home. I’ll need quick and easy meals that they can even prepare themselves as well as hopefully wholesome snacks. It looks like a trip to Sam’s Club is a must to make real good food and summer snacks real easy.

You know how you enjoy grocery shopping while your children are at school? You get to look through the produce, read labels, and count your coupons? Once summer hits many of us will be headed to the grocery store WITH our kids. You know what that means right? “Mom can I have …” “But MOM, I’m hungry?” “Look Mom (or Dad) there’s a coupon for it. Can we get it huh?” Ordering groceries online means that I can do it at night while they are asleep and pull up for pick up without the joys of grocery shopping with the girls.
Buying in “bulk”
With summer here it is necessary to have more food in the house. We need quick and easy snacks for on the go as well as lunches that the girls will be eating at home. Now is the time to offer them items that they couldn’t get at school that they will enjoy. Buying in bulk may save me money, but it definitely saves me time and trips to the store.
Sam’s Club offers organics*!
There are several grocery stores around me and many of them offer organic and natural food items. A few of them even are specialty stores for organic and natural products. Since Sam’s Club offers some of our favorites like Cascadian Farm and Annie’s there’s no need for me to make a second trip to the store.
A recent trip to Sam’s Club meant I could stock up on things like a favorite snack of Annie’s White Cheddar Popcorn Bag as well as Annie’s Organic Mac and Cheese. For snacks on the go check out your Sam’s Club for items like LaraBar Core and Cascadian Farm Chewy Bars. It’s not all about the children though. Real Good Food Summer Snack Recipes
Since we may be buying some items in bulk I want to make sure that the girls don’t get bored with what we have on hand so I’m thinking outside the box. Use those items to create more than what they are intended for! For example, use the Annie’s Macaroni and Cheese to make a quick casserole. Add cooked ham and steamed broccoli, top with panko crumbs and shredded cheddar cheese. Pop into a 350 degree oven for about 10 minutes.
Here’s one recipe to help us beat the heat this summer that makes a delicious wholesome snack.
Crunchy Granola Yogurt Bars Recipe
2 1/2 cups Cascadian Farm Granola Oats and Honey crushed
4 tablespoons butter melted
1/2 cup creamy peanut butter
15 ounces of Annie’s Whole Milk Very Vanilla Yogurt
3 tablespoons chocolate chips or cocoa nips
Heat oven to 350. Add butter to crushed Cascadian Farm Granola Oats and Honey and mix. Take half of this mixture and pat down into non greased 8 inch rectangle pan to make a granola crust. Set remainder to the side.
Melt creamy peanut butter in the microwave until smooth and pourable. For me this was twice on 30 seconds in a glass bowl.
Allow peanut butter to cool.
Remove baked granola from oven and allow to cool for about 5 minutes. Pour peanut butter over granola crust. Allow to continue cooling about 20 minutes total.
Top with Annie’s Very Vanilla Whole Milk Yogurt.
Add chocolate chips.
Top with remainder of Cascadian Farm Granola mixture and chill in freezer for approximately 4 hours.
Slice and serve.
If you don’t plan on eating immediately slice into bars. Store bars in freezer in small size freezer bags until ready to eat.
