One way I have been trying to incorporate some more vegetables into my rather stubborn daughter’s diet is by making substitutions in her food. Someday yes, I’ll tell her the truth, just as I’ll talk about Santa Claus, the Easter Bunny and the Tooth Fairy, but for right now I’m happy to get something in her that even resembles a vegetable. Our latest new find (and substitution) is Veggie Patch Meatballs.
You can find Veggie Patch Meatless Meatballs in the freezer section of your grocery. They are (sort of) just like meatballs!

What don’t we like about Veggie Patch Meatless Meatballs?
The only thing I recommend is a large and small box size. I would love to be able to buy them in bulk. As it stands, one box is almost enough for a meal of spaghetti and meatballs or a few meatballs subs or a small appetizer but when cooking or entertaining on a large scale (or buying in bulk) a larger box would be a big help.
What do we do with Veggie Patch Meatless Meatballs? Just about everything you would normally do with a meatballs. Here are some ideas to get you started.
Cook meatballs according to package instructions. Place meatballs and sauce in toasted whole wheat hot dog bun (works perfectly). Top with mozzerrella cheese and toast for a minute in your toaster oven.
Sweet and Sour Meatballs (party or luau)
Cook meatballs according to package instructions. Place them in a sauce of BBQ and pineapples and simmer for about 10-15 minutes. Serve with toothpicks.
A variation on this recipe is to use once can cranberry sauce and about 2 cups of salsa. This is a favorite at many playdates and celebrations.
