I know I shouldn’t complain, because compared to many of you my winter has been pretty easy. But for us here in Texas it’s been far too cold and yes we have even seen the dreaded “S” word – snow! I don’t know what to put on my kids because I can’t even FIND gloves, hats and scarves and winter coats for the adults, as y’all say up North “forget about it!” But I do know what to serve them on a cold night, and that would be a Slow Cooker filled with Potato Cheese Soup. The kids love it, it’s filling and if you need a little extra food you can make a salad or a grilled ham sandwich (I made sausage sandwiches) but I think it’s fine and filling just the way it is. Yep, Goldilocks thinks this Potato Cheese Soup recipe is “just right” for cold days and really any day! The Slow Cooker does all the work.
I like this particular slow cooker because I can cook the onions first, then add all ingredients. Also the non stick insert makes it easy to pull out and wash!
