Here’s my recipe for Chicken Pasta Mexicana:
Ingredients
1 lb. chicken (I used boneless, skinless, natural because I’m trying to cook healthier)
2 tbs. cooking oil or spray
2 cups cooked Barilla (or your choice) Rotini pasta (whole wheat is our personal favorite – even the kids like to eat it.)
3/4 cup Wholly Salsa (my husband liked the original mild salsa while the teen preferred the hot so I let them add more to their dish so everyone was happy)
2 tbs. Philly Creme Cheese Sante Fe Spread
1 can Green Giant Southwestern Corn (with peppers, onions and black beans). You can use your own but I happen to have this and it make a delicious and fast short cut.
1/2 cup shredded cheddar cheese
Instructions:
Cook chicken in hot skillet. Cut into pieces. Cook pasta in boiling water and drain. Warm Southwestern corn. Now mix all ingredients together in bowl except for shredded cheese. After thoroughly stirred together top with shredded cheddar cheese. Serve warm.
The really nice thing about this recipe is that there are so many different variations you can do, depending on what you have in your pantry. I’m BIG on grabbing and going with my cooking with whatever I have in my pantry, especially on a Friday night.
Why use Wholly Salsa?
Sure, there are plenty of salsas out there. but Mr. Money Saving Parent will tell you that I am well, a little picky about my salsa. I want full flavor. I want it to look and taste like I actually made it myself. I want organic or natural ingredients because it’s important to me. I can’t always do it but there are some products that are hardly more expensive than the non organic/natural, and this is one of them.
There are so many Wholly Salsa’s to choose from! I’ve used the Pineapple Salsa to make this delicious dip/spread that we used for chips and carrots. We used cream cheese and some spices and then blended it all together and it was wonderful! (Some of my guests were counting their carbs). Mango and Pepper, Spicy, Verde and my personal favorite straight from the container is Pico de Gallo and Guacamole. It’s fresh tasting and I admit, it’s hard to stop at just a few snack bites!

I love the simple chips and salsa.
Nachos & Quesadillas are my favorite way to use wholly products.
My favorite way to eat Guacamole is with chips….can’t eat just one!
I admit that since trying my samples our chip costs have rapidly risen! Can’t seem to keep them in the house!
Salsa and guac are a good snack.. served with baked chips makes for a healthy snack!

I would use the salsa in my chicken bruschetta recipe. Mix it in with my stuffing and roll it up in pounded chicken breast. top with cheese

mix a couple together, turns our to be a wonderful flavorful salsa
Instead of maple syrup, I like to use salsa on my waffles or pancakes. It’s a low fat & nutrition alternative. =-)

I like to mix wholly guac with fresh diced tomatoes and eat with tortilla chips.
I use it in burritos a lot. We LOVE burritos!
I have never had guacamole before, but I usually eat salsa either with chips or as a topping on fajitas or egg burritos.
I like to use spicy salsa and guacamole in seven layer dip.
I love using salsa on nachos

the only way i use salsa or guac is as a dip
