With a large, very busy family I like recipes that we can all do together and that takes just minutes to make. I sometimes think “minutes to make” should be my motto when it comes to cooking. But I also want things that are healthy for the whole family and taste good. This is a tough balance to find. But I discovered recently that I could actually pump up the volume of my recipes with some quick and easy recipe additions and still have the food that we want and love. This week Newman’s Own Organics gave us two really easy and delicious recipe ideas Berry Sweet Pancakes and Cranberry Cole Slaw. My inspiration came from these fruits from Newman’s Own Organics.
First, I had thought to make some bread or oatmeal using the Apples. However, those didn’t last long enough to get used in a recipe – I am afraid that they were eating by the kids straight out of the bag. I heard my own blogger mommy words come back to me, “Don’t touch those mom they are ours!” Morale to the story, these fruits are pretty yummy all on their own and while the ziploc bag makes it easy to store we didn’t get to store the apples at all. In my children’s defense, I should now openly admit to eating all the Hermits. Yes, all of them. Not in one day but they were irresistible! Sweet with molasses, chewy and soft with big plump raisins. I wish it had a resealable bag, because then maybe I wouldn’t have use “But the bag is open” as my excuse for eating them all as quickly as I did. I think that tells you how we feel about Newman’s Own Organics. We eat them as snacks and used them as inspiration to create some yummy meals.
Berry Sweet Pancakes are easy to make. Simply use your favorite pancake recipe. Our pancakes were made using the pancake directions on Krusteaz Whole Wheat and Honey Pancake Mix.
Add a few dashes of cinnamon to the dry pancake mix before mixing in the liquid ingredients and a teaspoon or two of vanilla (according to taste).
Next fold in your Newman’s Own Organics Berries. Then cook as needed to make them golden brown. For my skillet it was on 350 degrees and about 3 -4 minutes on each side.
Serve with your favorite syrup. It’s so easy even the kids can do it!
Start with your favorite bag of pre-cut cole slaw mix that includes green and white cabbage and carrots. Sure you can do this yourself but I decided to take the short cut. Then add 1 cup of Newman’s Own Organics Cranberries. Top with Brianna’s Poppyseed Salad Dressing and then stir so that they salad dressing gets worked through your slaw mix. It’s that easy! I made a large bowl of this to go with some roasted chicken with tequila, mango, coconut sauce and the whole salad was GONE in one meal! I thought I would have enough left over for one more lunch. It also appeals to the kids because it is a sweet salad so it’s easier for them to get excited about eating!
