Make it at home just like Joe’s: Joe’s Crab Shack Recipes for Garlic Boil, Crab Legs and Rajin Cajun

It’s not a big secret that Joe’s Crab Shack is a family favorite for us.   But if you are new to our blog you may not have seen some of the reasons why like:

  • Seafood is a healthy choice. Three ounces of cooked crab is high in protein but contains only 95 calories and is very low in saturated and trans fats. Shellfish is also known for its heart healthy Omegas-3 fatty acids.
  • It is FUN!  The kids love to shake the shack and to enjoy the outdoor play areas that many Joe’s Crab Shacks have to offer.
So wouldn’t it be great if you could make some of your favorite recipes at home?  Well know you can!  Grab your recipe cards because you are going to want to write these down!
Garlic Boil:  (makes 2 gallons) 

Whole Garlic, Chopped 1/4 – 1/2″ pieces 1# (w)
Salt
3 Tablespoons
Black Pepper
2 Tablespoons
Water
Soybean Salad Oil
1/2 Cups

1. Place whole heads of garlic with skin in a food processor or use a chef knife to rough chop garlic.
Remove any excess stems, skin or discolored pieces.
2. Combine all ingredients a suitable stock pot.
3. Bring to a temperature of 212 degrees then lower heat and maintain at a simmer (200 degrees)
for minimum of 30 minutes.
Boil must have minimum temperature of 200 degrees and maximum of 225 degrees.

Garlic Flavor Crab Legs:

Place crab legs into the garlic bath and heat to a minimum 6 minutes or until reaching an internal
temperature of 155 degrees F.
Transfer into a platter and serve immediately.

Rajin Cajun Flavor Crab Legs:
Place crab legs into the garlic bath and heat to a minimum 6 minutes or until reaching an internal
temperature of 155 degrees F.
Place Cajun seasoning, Creole seasoning and melted butter in a mixing bowl, using a rubber spatula mix
to incorporate well. Remove crab from garlic bath and add to the mixture. Toss and mix well with a
rubber spatula.
Transfer into a platter and serve immediately. Add more seasoning as needed. Good eats.
