We are continuing our clean eating month with this quick and easy recipe for Honey Roasted Red Potatoes. I admit the first time I had them it was at a restaurant and it took me a few tries to get it just right. But that’s just because I was over thinking it! In just a few minutes of prep you get a warm, delicious side dish for any meal, but it goes especially well with our Steakhouse Steak recipe.
Wash thoroughly about 10-12 red potatoes. I like to use a fruit and veggie wash from Whole Foods Market and the organic brand since we are doing Clean Living recipes this month. Slice them evening. Use a medium size glass baking dish and sprinkle EVOO to stop from sticking. Now, if you aren’t doing a clean living recipe, I admit that a good layer of butter actually (I think) tastes better – but the good, all natural butter doesn’t always fit into the budget. EVOO works in a pinch.
Liberally pour honey all over the potatoes making sure to get honey somewhere on every slice.
Chop up about 1/4 a cup of parsley and sprinkle over top of potatoes.
Bake in over on 375 until potatoes are tender. This is usually about 30 minutes but you may want to start checking at 25 because you don’t want them to get over cooked. The honey will burn and stick to the pan. YOu want tender potatoes and a rich warm sauce.
Remove from oven and serve.
