Pomegranate Honey Glazed Chicken

Easy to make and bake, delicious served over rice.
Ingredients
  • 2 lbs chicken (you can use wings, thighs, breast or boneless)
  • ½ cup pomegranate juice
  • 1 cup beer - I used Shiner Cheer but any porter or Christmas ale would work
  • ¼ cup brown sugar
  • 1 tbs soy sauce
  • 1 tsp chili powder
  • 2 cloves garlic - finely minced
  • 1 tsp red chili flakes
  • 1 tbs honey
  • 2 tbs white vinegar
  • 1 tsp black pepper
Instructions
  1. Preheat oven to 425.
  2. Rinse chicken and pat dry.
  3. In a skillet combine all ingredients except chicken.
  4. Bring to a boil stirring frequently.
  5. Place chicken in skillet and let cook approx. 5 mins. in sauce.
  6. Flip chicken over and cook another 5 minutes in sauce.
  7. Take chicken and sauce and place in aluminum foil lined baking pan.
  8. Back for an additional 20 - 30 minutes until cooked through.
  9. Serve with rice or alone.
