Whether it’s Easter Brunch, Christmas or New Year’s morning these Sticky Pull Apart Cinnamon Rolls are so easy to prepare the night before and serve up hot and fresh in the morning. Get the whole family involved in rolling out the bread dough and you are done in minutes. I’ve shared the diabetic friendly version here, when I made them for my dad while they were visiting over the holidays. Mine are made in a rectangle baking pan, but you can also make in round baking pans or in the past I’ve even used a bundt cake pan. If you do the bundt cake version be sure to increase cooking time to about 45 minutes and watch it carefully to make sure it doesn’t rise up too much.
Ingredients
2 pounds frozen bread dough (24 Rhodes frozen dinner rolls)
1-1/2 cups Sugar
1/8 cup cinnamon
3/4 cup butter, melted
1/2-1 cup chopped pecans or walnuts
Optional: You can also add a half bag of butterscotch pudding to the cinnamon and sugar mix if you have it on hand. It adds almost a caramel taste to the buns.
Icing
1 cup powdered sugar
1/2 teaspoon vanilla
1-2 tablespoons milk
Extras – 9 x 13 baking pan, cooking spray and foil or wax paper
Instructions
Remove bread dough from freezer 30 minutes prior to using.
Butter baking pan. I used a coat or butter flavored cooking spray over the butter just to be sure.
Mix cinnamon and sugar (or Swerve)
Melt butter in a bowl.
Dip bread balls into bowl and cover with butter.
Drop them and roll in cinnamon sugar mix.
Place in baking pan. It was 4 balls across and 5 rows but your pan may measure differently. Leave room along edges for rising.
Now, MIX butter, cinnamon and sugar mixture together
Spread the mixture using a spatula or butter knife on top of bread balls.
Spray foil or wax paper with cooking spray.
Cover – and let sit overnight.
In the AM bake in 350 degree oven for 30-40 minutes.
While baking, mix together icing ingredients and spread over hot buns before serving.
