We cook at home frequently and while I like to cook from scratch as much as possible there is not always time to cook everything from start to finish. Five Fabulous and Fast Food Ideas Using Cocina Latina Beans
Tonight’s dinner features Frijoles a la Mexicana. These pinto beans are perfectly seasoned with onion, garlic, tomato and serrano peppers. Pinto Bean soup can take HOURS to cook perfectly but with Cocina Latina they were cooked in minutes on the stove top or the grill. A quick dish of macaroni and cheese, a Caesar salad and grilled BBQ Chicken and dinner was made in minutes. Everyone was able to chip in and help.
Grilled BBQ Chicken and Frijoles a la Mexicana
This past weekend we had some friends over to christen the opening of the pool. I needed something quick and easy which we could enjoy on the patio. This quick and easy layered dip was a big hit and so easy. Just start off with the Cocina Latina Refried Beans (did you know they are fat free and vegetarian?) mixed with taco seasonings. Layer in a pan or serving dish with your favorite toppings. We like Guacamole, Sour Cream, Shredded Cheese, Diced Fresh Tomatoes, Scallions, and Black Olives.
7 Layer Mexican Dip
I needed a really quick and easy dinner idea because we had so many activities to get to that there just wasn’t any time to cook. It was one of those evenings which got away from us with unexpected needs like school supplies for projects. Looking in the pantry and fridge I was able to come up with a Southwest Salad with Lettuce, Pico de Gallo and Spicy Ranch Dressing. But before I prepped my salad I did a quick Grilled Bean Burrito Wrap using the Frijoles Charros Machacados. These are Smashed Pinto Beans with Tomatoes, Serrano Peppers and a Touch of Bacon. Add finely chopped white onion and shredded Mexican Cheese (half Cheddar half Monterrey Jack). Wrap them and then grill or bake for about 8-10 minutes. Drizzle with some Queso, sides of salsa and sour cream and it was a huge hit with the kids! I admit Mom decided a Margarita was in order. It’s not your regular old Taco Tuesday meal!
Grilled Bean Burrito Wrap
Here’s another Not Your Taco Tuesday Night meals using the Traditional Refried Beans from Bush’s Beans Cocina Latina line. Unexpected guests (yes they heard the pool was open) and it was let’s see what I can find to serve and we all can share. Margarita’s were for the Mommy’s and then these fun Bean and Cheese Nachos. They are easy to make. Simply warm refried beans, and start topping the nachos. Ours are topped with Queso, Mango Salsa, Cilantro and Scallions.
Nacho Taco Tuesday
Rainy days and Monday’s really did get us down here in Houston with hail, storm damage and flooding. I thought this was a great week to make something in the slow cooker so I grabbed a can of the Bush’s Beans Cocina Latina Frijoles Cubanos.
