Recently my parents visited and were meeting my oldest daughter’s significant other. I admit I wasn’t planning on having to cook dinner for almost 10 people but as dinner time approached I realized that it was either find something in the kitchen or consider ordering in dinner. Everyone was having such a good time on the patio and the pool I opted for a family favorite which I can easily make for a crowd. Heading to the pantry I grabbed my Skinner pasta, spaghetti sauce and started to make my Easy Cheesy Baked Spaghetti. I knew that it would put a smile on their faces!
Easy Cheesy Baked Spaghetti
1 package of Skinner spaghetti pasta
1 and ½ jar of your favorite spaghetti sauce
1 lb ground beef or ground turkey (I used ground beef)
½ tsp Italian Seasonings
½ cup Ricotta Cheese
½ cup Cottage Cheese
½ cup Grated Parmesan
1 cup Mozzarella Cheese
Cook pasta according to package instructions. After fully cooked, drain water and give it a quick wash with cold water to stop the cooking process.
Sprinkle ground beef with a pinch of garlic powder and salt.
Cook ground meat thoroughly until no longer pink. Strain any fat from pan before adding sauce.
Add spaghetti sauce and simmer low.
While your sauce and noodles are cooking mix all cheeses but mozzarella cheese together with Italian Seasonings. Reserve ½ cup of the mozzarella cheese for a topping.
Layer spaghetti noodles in bottom of a 9/13 pan.
Top with meat sauce.
Top with cheese mix.
Top with ½ cup of mozzarella cheese.
Layer more spaghetti noodles.
Top with spaghetti sauce.
Top with remaining ½ cup of mozzarella cheese.
Bake on 375 for approximately 20 minutes.
Remove from oven and let stand for approximately 5 minutes before serving.
I rounded dinner out with a quick Caesar Salad and garlic bread and dinner is served. It was fun to sit down family style with all of us together. It wasn’t too hard to get everyone out of the pool once the aroma of oregano, basil and garlic was detected. Watching the pasta get scooped from the dish, seeing the ooey, goey goodness of cheese, and the family was practically fighting over who got to serve themselves next. After all isn’t almost everything better with cheese? If we hadn’t had company I’m not so sure my children would have been on their best behavior.
After dinner, my mom asked me how I made my Easy Cheesy Backed Spaghetti because she wanted to make it when they got back home. She thought it was perfect for when all the grandkids, my brother and their great grandchildren where over for dinner. I told her she could get it on the blog. Then I wrote it down for her.
